We've got donuts on the brain. But sometimes you just don't want to leave the house, even if it is for a perfect, sugary treat. Thank goodness for this recipe from Cook's Country. You just pop the dough in a muffin tin -- no special equipment needed for these fantastic crowd-pleasers.


Muffin Tin Donuts
Makes 12 donuts

2 3/4 cups (13 3/4 ounces) all-purpose flour
1 cup (7 ounces) sugar
1/4 cup cornstarch
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup buttermilk
8 tablespoons unsalted butter, melted
2 large eggs plus 1 large yolk

 

COATING
1 cup sugar
2 teaspoons ground cinnamon
8 tablespoons unsalted butter, melted

Adjust oven rack to middle position and heat oven to 400 degrees. Spray 12-cup muffin tin with vegetable oil spray. Whisk flour, sugar, cornstarch, baking powder, salt, and nutmeg together in bowl. Whisk buttermilk, melted butter, and eggs and yolk together in separate bowl. Add wet ingredients to dry ingredients and stir with rubber spatula until just combined.

Scoop batter into prepared tin. Bake until doughnuts are lightly browned and toothpick inserted in center comes out clean, 19 to 22 minutes. Let doughnuts cool in tin for 5 minutes.

Whisk sugar and cinnamon together in bowl. Remove doughnuts from tin. Working with 1 doughnut at a time, brush all over with melted butter, then roll in cinnamon sugar, pressing lightly to adhere. Transfer to wire rack and let cool for 15 minutes. Serve.

That's the recipe, for sure! I watched that episode this morning but wasn't quick enough to write it down.  I found out the hard way that it costs money to subscribe to the CC or ATK website.  Maybe I'd better copy it to my computer before the recipe police catch on and take it down, lol.

(only half joking.. i am going to copy it Smiley Happy

Usually on the Cook's Illustrated website, any of the recipes from the current season's episodes of America's Test Kitchen or Cook's Country are accessible online for free. Recipes from previous seasons are restricted unless you are a subscriber (to the website, not a subscriber to the magazines).

I tried to access this one and a pop-up appeared telling me how to subscribe. Without subscribing, the recipe was blurred out. At one point last year I did take the trial subscription offer. I didn't use it enough to justify the high price - if I remember correctly it was more than $60 for the year.  I'd rather purchase the cookbooks, which is what I'll probably wind up doing.

Hi house_cat,

I know you asked specifically for the Cook's Country recipe, but I thought you might like this one too. It is quick and easy (no brushing with butter or rolling in cinnamon sugar) been making them for a long time and one of my most requested to bring.  

 

Doughnut Muffins

 

1 egg

1/3 cup cooking oil

1/2 cup milk

1 1/2 cups all-purpose flour, sifted

1/2 cup sugar

2 teaspoons Clabber Girl Baking Powder

1/2 teaspoon salt

1/2 teaspoon nutmeg

 

Margarine or butter (sliced and cut into 4-6 pieces per slice)

Topping

3 tablespoons sugar

1 teaspoon cinnamon

 

In a mixing bowl, beat egg with fork. Add oil and milk; continue beating with a fork; set aside. In a separate bowl, sift flour, measure and sift with sugar, Clabber Girl Baking Powder, salt and nutmeg. Add to oil, egg and milk mixture; stir with fork very lightly.
Turn into greased muffin tin or greased muffin cups. Sprinkle mixture of sugar and cinnamon on top of batter before baking;   place one piece of butter on top of each. 

Bake at 400 degrees F for 20 minutes.
Makes 12 medium-sized muffins.
