Does anyone have a recipe for baked Hush Puppies instead of fried ones?

 

I have seen several recipes for Hush Puppies, but they they all are fried.  Does anyone have a recipe for baked Hush Puppies? 

 

I have started baking my salmon patties instead of frying them and they turn out great.  I am wondering how Hush Puppies would turn out baked.

Just bake them in mini muffin tins.  Not nearly as good as fried but much healthier.

Dear Jerseygirl,

     What a great idea!  The mini muffin tin idea will make the Hush Puppies the perfect size and insure that they get browned on all sides.

I thin the baked version is called corn bread.

I would add extra oil or spray with oil after they are made to add the crispness of a hush puppy.

Zhills, sorry but I have to ask a couple of questions . . . would you add the bit of oil before you add the batter so it gets crispy while it is cooking or would it just absorb into the batter?

 

If it was to be added afterward, I am a bit confused as to how the spray of oil would add to the crispiness.  Would you immediately pop them out onto a rack and spray immediately while they are still piping hot?

If you add the oil to the batter it will make a crisper hush puppy.

 

I would spray with an oil spray just before I put them (1" balls) into a hot oven.  Probably 400 for 15-20 mins.  I haven't sprayed hush puppies, but I use this method for all my roasted veggies if I want a crisp exterior. (coat with crumbs then spray) 
I also spray breaded shrimp and bake it.

 
"Spray cookie sheet and shrimp with cooking spray, bake in 450 degrees oven, 8-10 min., turn, spray again and bake 8-10 min. more. Watch them carefully!
They came out crispy and delicious! Now that I know how to fix them without deep frying."

 

I don't see why it wouldn't work with hush puppies.
