Over 50 spices? I'm not sure I can name 50! LOL What types of foods are your favorites to cook and eat?

One word to the wise, from somebody who makes up a lot of recipes, some on the spot -
Be sure to write it down! What I learned to do was that if it was a success I would write it all down right after we ate. If it's not too complicated you can write it (in pencil, so you can make revisions!) as you are cooking.
I can't tell you how many recipes I created on the spot and never again remembered them. ![]()

Mexican and Thai are my favorite. I make a pretty good shrimp creole. I like a variety and you just can't go out and eat here. Very few restaurants.

LOL, yes I do this as well. I still have a recipe card box and use the cards and print in pencil until I'm happy.

@debic This got me to thinking about my own supply, as I also have quite a store. So I just counted the jars. Not counting the fresh herbs, salts or peppers on hand, I have 51 jars of different herbs and spices in my cache. None of them are blends and just about all the spices are 'whole,' as I prefer to grind or grate as needed. Like you, I also keep the jars in alphabetical order. You almost have to, if you want to ever be able to find anything when you need it.

LOL, one can never have too many. I keep mine in 8oz jelly jars. I could spend all day in my kitchen and often do.
