Personally I don't like pancakes but I've seen recipes for low carb ones that use almond flour which might be good for your husband.

I combined two pancake recipes from "Cooks Illustrated Cook Book" to make my favorite pancakes. I like it because it makes a plump pancake, with beautiful coloring and lovely texture. The taste is very good. Last weekend, I sprinkled blueberries and raspberries onto the pancakes before I flipped them. I was in pancake heaven and fought my husband for the last one.
2 Cups all purpose flour
2 Tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups milk made "sour" with 1 Tablespoon fresh lemon juice (set aside for 15 minutes)
1/4 cup sour cream
2 large eggs
3 Tablespoons (cooled) melted butter
All ingredients should be room temperature. Mix the drys in a big bowl. Whisk the wets in another bowl. Pour the wet mixture over the dry mixture and stir until just combined. Batter should look lumpy with some dots of unmixed flour. Let batter rest 10 minutes.

This is the one I make. I mix the dry ingredients and store it in a mason jar and make pancakes as needed out of it.

Multigrain Pancakes with Raspberries & Ricotta Sauce
Serves: 4
Hands-on time: 10 minutes
Total time: 20 minutes
INGREDIENTS:
1 1/4 cup white whole-wheat flour
1/2 cup spelt flour
1/4 cup wheat germ
1/2 cup regular oatmeal, ground
1 tsp Sucanat
1/8 tsp sea salt
1/4 tsp baking soda
1 tsp baking powder
1 egg
1 egg white
1 cup low-fat buttermilk
1 cup unsweetened plain soy milk
Olive oil cooking spray
1 cup raspberries
SAUCE
1/2 cup plain Greek yogurt
1/2 cup low-fat ricotta cheese
2 tbsp pure maple syrup
1/8 tsp cinnamon, ground
INSTRUCTIONS:
Prepare pancakes: In a medium bowl, mix both flours, wheat germ, oatmeal, Sucanat, salt, baking soda and baking powder. In a smaller bowl, whisk together egg and egg white, buttermilk and soy milk until foamy. Pour wet ingredients into dry and mix until well blended; let sit for 5 minutes so flours have time to absorb liquid (mixture will thicken).
Prepare ricotta sauce: In a small bowl, combine yogurt, ricotta, maple syrup and cinnamon with a whisk until smooth and creamy.
Heat a griddle or large skillet over medium-high heat (about 350°F) and coat with cooking spray. Pour pancake batter onto griddle in large spoonfuls (4 inches in diameter). Cook until bubbles form around edges, about 3 minutes. Flip and cook for another 2 to 3 minutes.
To serve, stack pancakes evenly among plates, drizzle with 1/4 cup ricotta sauce and top with 1/4 cup raspberries.

@sidsmom Pancakes? I have this in a bowl several time a week.

So off I went to Mr. Google...and I found the most perfect Instagram photo on the interweb...with recipe. Not sure what that white stuff is (Maybe a coconut cream)..and I never, ever go this fancy, but it gives you a tasty visual, yes?!
I'll just scoop out my mixture on a baking sheet & bake all of them at one time, instead of 'frying' them. Now...what other foods can be deconstructed into something totally different? 🌼

Oopsie. It has everything to do with pancakes...in my world! These 3-ingredient pancakes are h.u.g.e. in the plant-based world. I'm in that mindset for so long...when I come up for air, I assume everyone knows what I'm talking about.
The plant-based world is really, really creative w/ their food...zoodles being another one of our inventions.
Could I interest you in,
-Chocolate sweet potato pudding
-Rice paper bacon
-Carrot dogs
-Liquid 'cheeze' made w/ potatoes
-Black bean brownies
Just some of my favorites.
All these foods are low in calories/fat, high in nutrition & super cheap to make.
