Today's issue of The Washington Post is chock full of great salads and there are two chia puddings that are not to be missed!

Was this the salad you saw published? I've been making this one for several years.
Grated Carrot & Raw Beet Salad
Source: food.com ---Modified
4 large carrots, peeled & trimmed
3 beats, peeled and trimmed
2 garlic cloves, finely minced or 1 tsp garlic paste
1 Tbs olive oil
1 Tbs balsamic vinegar (I prefer light to dark balsamic)
1 tsp Dijon mustard
Tobasco sauce or chili pepper flakes to taste
Smoked or regular sea salt
Fresh ground pepper
Optional: One chopped apple, plus lettuce leaves for lining dish

Hello @ sfnative! II have missed you! The beet carrot salad in the Post mirrored your recipe...I was a wee bit more conservative with the tobasco!

@phoenixbrd, I love chia pudding too! On @sfnative suggestion, I bought hemp seeds to make hemp milk. I am going to try making it along with the chia pudding. I have no idea what hemp milk tastes like, but sfnative made it sound yummy. I love that you can make it anytime: no soaking required!

@Poodlepet2 Just a heads up....I love to sprinkle hemp seeds on my salad it not only makes the salad creamy and yummy, but gives you a little protein kick!

@phoenixbrd, do you have any recipes for a creamy vegan ranch type dressing? I am thinking a soy yogurt base, but rats-I forgot to make it this week. I am open to suggestions....

@Poodlepet2 You have got to have a good dressing on that salad....especially for me because a honkin' big salad is either a lunch or dinner for me most days. I could write a book on dressing because I like making my own and I'm vegan plant based so what appeals to me might not appeal to you. I can tell you that if you want to go the nondairy route...SO makes the best yogurt and it is coconut based rather than dairy (and a chocolate is a special once-in-awhile treat). If you want to I'll give you my go-to dressing, it is creamy and delicious and use it almost daily but it is not ranch. I do keep Follow Your Heart dressings in the refrig and always have Ranch, Blue Cheese, and Honey Mustard...they are the best for commercial! They are vegan but very creamy and yummy. The Honey Mustard is a to die for on a spinach salad, especially sprinkled with hemp seeds. I keep these mostly for others (because they do have some olive oil and flaxseed oil in them). I am usually oil free but indulge on occasion. Sorry for the long post and I didn't even answer your question![]()
So if I was going to make a vegan ranch, I'd start here:

@phoenixbrd, thank you! I have made your dressing before and I have turned it into a variation of Green Goddess as well. Thanks for jogging my memory!.I am not really a vegan, but I have a couple of vegan days a week-and I hear a huge salad every day. The more vegetables, the better!
I will check Amazon for the Follow Your Heart dressings....blue cheese flavored? I am in!!!!

The fat in dressings (mayo, nuts, seeds, avo) could easily be
replaced with white beans or...sounds weird, but it works....a potato.
Just wanted to throw that out!
