I'm not a baker but might try this recipe using just 1 cup of sugar. It seems like the pineapple would provide quite a bit of sweetness. Do you think that would negatively affect the end result (other than the taste)?

@LuvSoCal , It does seem like a lot of sugar , however I usually do a recipe once as written before I change it. Maybe try 1 1/2 at first. If you do make it and reduce the sugar , would you post your results ?

I usually buy cakes, not bake them myself.  However, the 2 cups of flour and 2 cups of sugar seems ... unusual. 

 

Also, no butter or oil?   I guess I'm a little rusty when it comes to baking cakes.

In baking doesnt sugar affect texture, not just for sweetness? If you are concerned about sugar content in a baked good   I wouldnt cut back on sugar but perhaps use a sugar substitute made fir baking.  Bakers chime in?

I was thinking the same thing.  Sounds nice and easy though.  My parents love pineapple in cake, I may have to make this for them.


An easier one is Betty Crocker white angel food cake mix and a 21 0z can of crushed pineapple mixed to get dry ingredient wet  put in non greased angel food or bunyt pan bake 350/ 40 mins or until tan on top. Sit upside down for 2 hours. scrape around edge dump on plate. easy and good. I've been making this for a long time, it's been in a lot of magazines. i also at times put Cool Whip on my piece, but it's tasty without .    don't over mix the mix and pineapple

This reminds me of a recipe I got from a coworker a long time ago.  She called it Cajun Cake . Capture.JPG

This recipe must be going around. I just got it from fb & made it. Still have some in the fridge. It was good but I felt the icing needed a little more moisture.
