Dark Chocolate Skillet Chocolate Chip Cookie!

I needed a quick recipe the other night, and I found this one. (click here)

 

I left it cooling and went to bed. When I got up in the morning, it was half gone.  DH and DS said it was GREAT!

 

It was so easy and quick, I thought I'd share it.  

 

*note: I didn't use a cast iron skillet, I used a non-stick skillet that was oven safe.  It popped right out!

 

INGREDIENTS
  • 1 stick (8 tablespoons) unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg, beaten
  • 1 and ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup chocolate dark choocolate chunks
 
INSTRUCTIONS
  1. Preheat oven to 350 degrees (F).
  2. In an 8-inch cast iron skillet, melt 1 stick of butter over medium heat.
  3. When butter is melted, add the granulated sugar and brown sugar, and stir to combine. Remove from heat and allow to sit for 5 minutes.
  4. Beat the egg, and add a small amount (about ¼ cup or so) of the melted sugar and butter to the egg mixture (to temper it) and whisk to combine.
  5. Pour egg mixture back into the skillet, and stir until completely combined.
  6. Add the flour, baking soda and salt. Using a wooden spoon, carefully stir to completely incorporate the dry ingredients.
  7. Add vanilla and chocolate, and stir to combine.
  8. Bake in preheated oven for 15-20 minutes or until edges are golden brown.
  9. Serve warm.
  10. Enjoy!

Oh, I REALLY shouldn't have gone to the link and looked at those pictures!  I shouldn't have clicked on Next Recipe -- Really Easy Cheese Danish either.  Thanks, house_cat, you share the yummiest recipes.

I know there are lots and lots of yummy chocolate chip recipes out there, but this was so easy to make.  Other than tempering the egg, it was a one pan deal, no mixer necessary.  My husband's favorite snack of all time is the Tollhouse cookie and he said this is just as good. That's saying a lot coming from him. I hope you try it and enjoy it.

That would be a fun one to make with kids. Like the idea of minimal clean up.

Thanks for this one, HouseCat!  BTW, I visited the blog where this recipe came from and wow, there are quite a few really neat looking recipes there.  I've bookmarked it to become a regular visit.  There was a 'quick' apple pie recipe there made with frozen puff pastry that looked out of this world.  If you have a chance visit the blog - it's called Lemon Sugar, i think.

Oh my goodness!  Run, don't walk to the kitchen to go and make these!  I subsitued milk chocolate chips because that is all I had handy and used my trusty cast iron skillet! Yummy, melty chocolate goodness.... you deserve this!

Thank you for this recipe.  Had all the ingredients in cupboard and made it today -  it was a big success DH loved it fast and easy a keeper.
