I have to give credit to Clinton Kelly for this salad dressing. Found it on the CHEW's site. I have made many times - delicious.

1-1/2 t Dijon mustard
2 T apple cider vinegar
1 T shallots, finely diced
1 T honey
2 T olive oil
Salt and pepper to taste

Combine all ingredients in jar and shake vigorously until emulsified.

PS: I cut the olive oil in this dressing from 3 T to 2 T. Also I just whisk the olive oil into the other ingredients in a small bowl instead of using a jar.
