Since I have not seen a recipe like this one posted I thought I would put it out there.
It's very easy to assemble (I make them open faced), and really delicious. I'm not a mayo fan, and cucumbers are not up there on my fave's list. But somehow the combination of these two plus the Aunt Jane's pepper all combine to make a unique flavor--I can't stop eating them!!
Cucumber Sandwiches
1 loaf Pepperidge Farm Sandwich bread
Mayonnaise
Aunt Jane's Crazy Mixed Up Pepper
Trim edges from the bread. Spread with mayonnaise and add a 1/4 thick cucumber slice. Sprinkle generously with AJ's pepper. Cover lightly with plastic wrap to chill; sandwiches are much better if the cucumber slices are crisp.
BTW, AJ's pepper does not have a strong peppery effect; it's more of a seasoning than a pepper product, IMHO. I use it in everything: Soups, stews, stir fry, scrambled eggs, and even as a quick sprinkle on for grilled meats. I won't be without it!
