Cucumber Salsa

2 medium Cucumbers peeled, seeded and chopped

2 medium tomatoes chopped

½ cup chopped green bell pepper

1 jalapeno pepper, seeded and chopped

1 clove garlic, minced

2 tsp lime juice

1 tsp fresh parsley

2 tsp cilantro

½ tsp dill weed

½ tsp salt

Mix all together, refrigerate for 1 hour, serve with chips, put in a pita pocket with cottage cheese, put on top of a baked potato, make an omelet, lots of uses or serve as a side dish.

Sounds good! I like different salsa recipes. Thanks! Just realized I copied a similar recipe recently....guess I better try it.

Hi Walker,

You can also add a onion if you like onions, I did and it was so good, I made an omelet for breakfast and added some feta cheese for a change, very good Smiley Happy

Sounds good deb! I would add those onions in too. I would think this would be good over fish or chicken also. Thanks!

My niece made a version of this for a family get together last summer (she omitted the green pepper, had s little more parsley and cilantro, and added red onion and cumin). IMO, is has to be cold to be at its best. So refreshing, I could make a meal out of it...just pretend it's gazpacho.

i make something similar to this as a side dish..... i use the small mediterranean/middle eastern cucumbers (with virtually no seeds and no need to peel), no green pepper, but it has spring onion and a drizzle of olive oil......so delicious this time of the year, especially when you use good tomatoes.

Hi Sunshine45, evoo is a great idea Smiley Happy We have a garden, it's so nice to go outside then pick them and make it fresh!
