You’re not cooking it long enough is my guess. (Been there, done that! It smelled so good we just had to eat it. Anyone care for more shoe leather?! No? 😂)  Now, when I cook one, and always on high for 6-7 hrs. depending on size, it falls apart, it’s so tender. 😋 Good luck and bon appetit!

Pot roast is easy....I am not a great cook either.  I put the roast in a hot pan and fry both sides, just until browned...then transfer to the crock pot....with a package of Lipton soup mix and a bit of water.

 

 I also add potatoes and a few hours later I add carrots, or sometimes I put the carrots on top, they cook faster than the potatoes and meat.    I cook until the meat is fork tender, almost falling apart because that is the way we like it.  You can make gravy from the dripppings if your like but we do not eat  gravy, (personal preference).  I picked up a roast for dinner this weekend because I don't have to fuss in the kitchen and we are going to be snowed in.
