Crispy Scallops with Tarragon Cream

Crispy Scallops with Tarragon Cream

Time 25 minutes Serves 4

1 egg
2 t. water
2/3 cup Italian style panko (Japanese) bread crumbs
1/3 cup mashed potato flakes
1 lb. sea scallops
1/4 cup olive oil
2 T. butter
1 T. flour
1/4 t. salt
1/8 t. pepper
3/4 cup heavy whipping cream
2 T. minced fresh tarragon or 2 t. dried tarragon


1. In a shallow bowl, whisk egg and water. In another shallow bowl, combine bread crumbs and potato flakes. Dip scallops in egg mixture, then coat with crumb mixture.
2. Heat oil in a large skillet over medium-high heat. Cook scallops in batches for 2 minutes on each side or until golden brown.
3. Meanwhile, in a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth; gradually add cream. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in tarragon. Serve with scallops.

Being landlocked here in the Midwest, I don't have much access to really fresh seafood, but I sent this recipe to one of my daughters who does have it easily available to her, she has made it several times, and once while I was visiting her. It was delicious.

It does sound very good. My husband loves scallops, but I'm not the best scallop cooker. I might just give this a try. Thank you very much!

I have everything, including the scallops, but the tarragon....and that can either be possible from Penzy's, or Publix when I go there next....THANKS.....been wondering what to do with them.....Cool

I don't have access to great scallops either...but I am thinking the wash with panko/potato flakes could be used on other sea food such as a fish filet. It sounds really good and I have a large jar of Tarragon that needs using!
