This recipe is from Marjorie Johnson, Minnesota's Blue Ribbon Baker. She is the tiny lady, with red hair and wearing a red dress, that you may see on Jay Leno. She is a bundle of energy and talks constantly! {#emotions_dlg.biggrin} Over the years, she has earned over 1,000 Blue Ribbons at the Minnesota State Fair!

Crispy Date Bars

Dough:
1 cup flour
1/2 cup firmly packed brown sugar
1/2 cup butter, softened
Filling:
1 cup chopped dates
1/2 cup sugar
1/2 cup butter
1 egg, well beaten
2 cups crisp rice cereal (Rice Krispies)
1 cup chopped nuts
1 tsp. vanilla extract
Frosting:
2 cups powdered sugar
1/2 tsp. vanilla extract
3 oz. cream cheese, softened

1.) Heat oven to 375 degrees. Combine first 3 ingredients; mix until crumbly. Press into ungreased 11x7" or 9" square baking pan. Bake at 375 degrees for 10 to 12 minutes, or until golden brown.
2.) In a medium saucepan, combine dates, sugar, and butter. Cook over medium heat until mixture boils; stirring constantly, simmer 3 minutes. Blend about 1/4 cup hot mixture into beaten egg; return to saucepan. Cook until mixture bubbles, stirring constantly. Remove from heat, stir in rice cereal, nuts and vanilla. Spread over baked crust; cool.
3.) Combine frosting ingredients, beat at LOW speed until smooth. Spread over filling.
Makes 2 dozen bars.
