Creamy Lemon Parmesan Salad Dressing.

This recipe was in the newspaper here a couple of weeks ago and it is so good.

2 1/2 Tablespoons mayo (I used veganaise)

2 Tablespoons fresh lemon juice

1 garlic clove, grated fine

1/4 tsp Worcestershire sauce

S & P to taste

Whisk all together then slowly whisk in :-

4-5 Tablespoons of olive oil.

Then mix in 1/4 cup of grated parmesan.

I use half olive oil and half canola oil because I don't like a strong olive oil taste, but that is just me. It makes a lovely dressing for a romaine salad. I used cucumber, vidalia onion and avocado in my salad. Then served with chicken and steamed little red potatoes. It was very good, if I say so myself!Wink
