I make this recipe every Thanksgiving and Christmas. It's a big hit and guests always want the recipe so I thought I'd share it with you. Enjoy!
Cranberry Sweets
½ cup flour
½ cup light brown sugar
½ cup oatmeal (uncooked)
¼ to 1/3 cup butter (or oleo)
1 teas. cinnamon
Combine above ingredients and make into crumbs. Reserve ½ cup mixture for topping.
40 oz. can of yams (drained well and cut into small pieces
~~~~~~ (OR about 3 lbs. fresh cooked yams, cut small)*
2 cups fresh cranberries
1 ½ cups miniature marshmallows
1/3 cup orange juice
1/3 chopped walnuts (or pecans)
Toss one cup crumb mixture with yams, cranberries and marshmallows. Place in large casserole and top with remaining crumbs. Add 1/3 cup orange juice. Top with 1/3 cup chopped walnuts. Sprinkle with cinnamon.
Bake at 350 degrees for 35 minutes. Serve hot.
*(If you use fresh yams peel, cut small and par-boil 8 to 10 minutes before adding to casserole.)
