This was served at a Christmas party I attended and I thought I'd share. The ingredient combination is so unusual but so very tasty.
Cranberry Salsa
This was served 3 cups fresh cranberries (12 oz bag)
2 jalapeno peppers, mince with cranberries (use more or less for milder or hotter)
4 green onions, minced (½ cup)
½ cup sugar
¼ cup cilantro, minced
2 tbsp fresh ginger, grated
2 tbsp fresh lemon juice (approx. juice of one lemon)
2 8 oz packages cream cheese
After discarding any bruised or soft berries, chop remainder with jalapenos in food chopper or food processor until minced, but not mushy. Empty into a bowl and stir in remaining ingredients. Cover and refrigerate for at least four hours for flavors to blend. Mixture is too tart to eat when first mixed together.
Serve with cream cheese on Wheat Thins, Trisket, tortilla chips, bagel chips or pretzels.
Can also top grilled fish or poultry.
Please note: Use only fresh cranberries which are available during the holidays. Frozen craberries get too mushy for this recipe.
