Simple and delicious!

Cranberry Pork Chop Bake

(8) 1/2-inch thick pork chops
15-oz can whole berry cranberry sauce
(2) oranges, juice and zest

Heat oven to 425 deg F.

Spray a shallow 2-qt casserole with nonstick cooking spray.

Place chops in bottom of casserole.

In a small bowl, combine cranberry sauce, orange zest and juice. Pour over chops.

Bake for 30-40 min or until chops are glazed and meat is cooked through.

Note: I always brown the pork chops first on each side, remove them to the casserole,
and then, using water, broth, juice or wine, pour a little into the skillet and over medium
heat cook to loosen the brown bits; then I add this to the casserole. Doesn't take long
and the flavor boost is nice!
