Here's a quick and easy pancake recipe without flour. I made it this morning.

 

1 cup Oatmeal

1/2 cup cottage cheese

2 eggs

1/4 tsp. Baking Powder

 

I used the food processor to mix it all up to the right consistancy and fried pancakes.

All turned out well and next time I'll add fruit to  it.  I made a double batch.

Do you grind the oatmeal into powder for this recipe?

Yes, after I added everything to it, I put it all in the food processor and ran that for a minue or so and it made a good batter for pancakes.

what kind of oatmeal did you use? Rolled or quick cook?
