I'm a fan of both cottage cheese and chickpeas, and was happy to see that I like everything else in this dish, too. However, the cottage cheese I like is very small curd and looks almost spreadable; it might disappear into the rest of the ingredients. 🤔 Maybe I can stir together everything but that and serve it over a scoop of the cottage cheese.

It looks like a great summer dish.

Well, honestly, cottage cheese sounds disgusting with this recipe.  Feta cheese or fresh mozzarella would be a better combination with this chickpea recipe.

I prefer cottage cheese with fresh fruit or spread on toast sprinkled with Everything Bagel seasoning.

@Calibeach , I made the Cottage Cheese Chickpea salad today, and it is very good. I did substitute the red bell peppers, for pimento.  We didn't have red peppers. 

I had this with potato crusted cod from QVC.

@Moonlady .... that is what happened with salad...I like small curd cottage cheese too and it does get a little lost in salad.  Next time I think I will add cottage cheese differently as you suggested.  I also want to try it with Feta cheese.  A good healthy salad!  😁

@Calibeach  I made your salad for my lunch today! It was absolutely delicious 😊🥗.  I didn't have a bell pepper, so I used some chopped sweet cherry peppers from a jar and I added some chopped artichoke hearts just for fun.  It was a light, refreshing and delicious meal.  I'm going to have the second serving of this tomorrow for breakfast.  Thank you for sharing this special cottage cheese salad recipe, Calibeach 🤗.

Yes, at some point I'm going to try the feta, too. This seems like a nice summer salad, with ingredients that I like, so I'm definitely going to make it work!
