Corndog And Then Some Casserole

CORNDOG AND THEN SOME CASSEROLE
(It's browned hot dog pieces mixed with celery, and corn, with a corn bread batter and Cheddar cheese).

2 cups thinly sliced celery
1 cup whole kernal corn, drained 2 tablespoons butter
1 1/2 pounds hot dogs
2 eggs
1 1/2 cups milk
2 teaspoons ground sage
1/4 teaspoon ground black pepper (or to taste)
2 (8.5 ounce) packages dry corn bread mix
2 cups shredded Cheddar cheese, divided

 

Preheat oven to 375*


In a medium skillet, saute celery and green onions in butter for 5 minutes.

 

Place saute mixture in a large bowl; set aside.

 

Slice hot dogs lengthwise into quarters, then cut into thirds. (or just slice them in rounds).


In same skillet, saute hot dogs for 5 minutes or until lightly browned.

 

Add to celery/onion mixture and mix all together. Set aside 1 cup of mixture.

 

Add cornbread mix, egg, milk and 1/2 the cheese and mix it all together.

 

Spread in a 3 quart baking dish sprayed with Pam.

Sprinkle on the top, 1 cup corn, celery, hot dog mixture you saved and then top with rest of the cheese.

 

Bake til cheese is melted and is golden brown.(Just keep an eye on it)

Hi @LilBitMissty!

So glad to see another recipe posted by you. Please keep them coming!  I don't eat hot  dogs but I'm thinking about using a  chicken or Italian sausage instead.  Do you think eitjer will work?  This reminds me of a tasty comfort dish I would have prepared on a busy weeknight when my son was a young grade school kid.
