I love the texture and flavor of the cornbread I make with Bob's Red Mill medium grind cornmeal. Recipe is on the back of the package.

They also have the organic version if you like. (Fine grind doesn't give enough texture for my taste.)

 

Instead of buttermilk, I mix plain yogurt with water. 

Sometimes I don't include the sugar.

Substituting olive oil works if you don't want to use butter.

 

(It says for a square pan but this round works perfectly.)

They served it three times a week to us in grade school and I always took a pass. After seeing the pictures from @PA Mom-mom & @GingerPeach I'm tempted to give it a try. I guess you moms know best.

@AuntG  It was never on our table growing up, but my DH grew up loving it, so I had to adapt. It's so easy to make, and it makes him SO happy! Win, win!

I keep Martha White's Yellow cornbread mix in my pantry for quick fixes. I use two packages to fill my cornbread pan. We do not like sweet cornbread so Jiffy is not our first choice.

Thank you everyone,  you are all the best!  I'm picking up some jiffy mix the next time I shop and I'll have to look for the Martha White flour.  It doesn't sound familiar, so I'm not sure they carry it here in Northeast Ohio.

This is the recipe I use, but instead of bacon drippings, I use vegetalbe oil to grease the cast iron skillet.

 

Alison Krauss' Winning Cornbread

  • 1 tablespoon bacon drippings
  • 3/4 cup Martha White® Self-Rising Enriched White Corn Meal Mix, plus additional for preparing pan
  • 1/4 cup Martha White® Self-Rising Flour
  • 1 tablespoon sugar
  • 1 cup buttermilk
  • 3 tablespoons Pure Vegetable Oil
  • 1 large egg, beaten

Preparation Directions

  1. HEAT oven to 450°F. Grease an 8-inch cast iron skillet with bacon drippings; place in oven to heat.
  2. COMBINE corn meal mix, flour and sugar in large bowl; mix well. Add buttermilk, oil and egg; blend well. Sprinkle small amount of corn meal into hot skillet. Pour batter over corn meal in hot skillet.
  3. BAKE 10 to 15 minutes or until golden brown.

That looks SO good, but Amz is showing that brand as $8.39 for 32 oz!!!!

 

Do you pay that much for Martha White or is Amz ripping off as usual?

 

I can get 32oz of Indian Head White Corn Meal at Wegman's for $1.59 !!
