@Knit-Chick   if you decide to buy Jiffy Mix pick up two boxes for an 8x8 square pan.  For one pkg. of Jiffy you would need a much smaller pan and lower.  I always use 2.  Homemade cornbread will not be as sweet at Jiffy.

@Katcat1 thank you!  it's on my shopping list.  I'm giving up on making it from scratch!

@Duckncover Since I'm originally from Texas, CornKits is my go-to choice, too.  Living in California, it seems like we can only get the cake-like, sweetened version of cornbread, so I always pick up a couple of packets of CornKits when I'm back in Texas for the holidays.
