Making cornbread taste good is more difficult than you think. The last few times I made it, it was dry and tasteless......

There is a restaurant in town that serves their cornbread with this honey butter:

 

2 sticks softened butter

1/2 cup honey

1/2 cup marshmallow Fluff

 

Whip everything with an electric mixer and serve at room temperature.

We either order it online or our friends back home will send a care package.  We just try not to take too much advantage of them.  We always reciprocate by sending them some Hawaii goodies.  But yes, it's hard to pay the Amazon prices knowing how inexpensive it is back home!

Something about an iron skillet that makes cornbread extra good. Your recipe got me to use my 2 boxes of Jiffy mix that I was going to make corndogs with, but never did.. My husband likes cornmeal waffles, so I think he would like this cornbread with strawberries instead of strawberry shortcake. As for me, I am glad I have some of this great cornbread left so I can make my glass of cornbread and buttermilk for breakfast..

Cornbread is truly wonderful.  But if you add sugar it isn't cornbread, it's cake.  Enjoy experimenting with recipes.  I use Martha White's white cornbread mix, when I can find it.

I used to make cornbread from scratch all the time. Now I just use a packet of CornKits....easier and makes just enough. Key is to make it in a cast iron skillet....makes all the difference.

II actually saw White Lily SR flour at a Kroger in my area last year...,my jaw dropped. Have never seen the corn meal mix...even when I lived in Nashville.

I usually make my cornbread from scratch using either White Lily or Martha White self-rising cornmeal mix.  Both are owned by the same company.  When I am feeling lazy or crave something a bit spicy, I go with Zatarain's Cheddar Jalapeno cornbread mix.  It is really good.
