I made these last night for dinner! They were really good. Recipe is courtesy of "Closet Cooking."

Corn & Zucchini Quesadillas

1 ear corn (grilled and kernels cut off the cob)

1 small zucchini (grated, squeezed well & drained)

1 jalapeno pepper, chopped

1 green onion, sliced

1 handful cilantro, chopped

1 tsp cumin

Juice from 1 lime

1/2 - 3/4 cup shredded cheese (I used a Mexican blend)

Mix the zucchini, corn, jalapeno pepper, onion, cilantro, cumin, and lime juice.

2 flour tortillas

Melt a little butter in a pan or brush lightly with olive oil. Place a tortilla in the pan and sprinkle with cheese. Top with zucchini mixture and follow with remaining cheese. Place 2nd tortilla on top.

Cook until the tortilla is golden brown on both sides and the cheese is melted. I had sour cream and salsa on the side.

An easier way to make these is to just put mixture on half of tortillas and just fold over, like a taco!
