Corn, Potato & Shrimp Chowder

10 ounces frozen corn
1 cup milk
2 teaspoons olive oil
3/4 cup frozen pre chopped onion (or fresh)
3/4 cup prechopped bell pepper mix
1 cup refrigerated mashed potatoes
1 cup chicken broth
1/2 pound frozen cooked salad shrimp, thawed
1 Tbs herbs de Provence
1. Place 1 cup milk & 1 cup corn in a food processor or blender: process
until almost smooth.
2. Heat oil in a Dutch oven. Sauté onion & peppers until tender.
3. Stir in remaining ingredients, except shrimp, and simmer 5 minutes,
4. Add shrimp. Heat until thoroughly heated.
5. Salt & pepper to taste.
Comments: Frozen fajita vegetables are a great way to get all of the colored peppers in the soup when peppers are out of season.
