Cheese Soup (CI)

Amount Measure Ingredient -- Preparation Method

3 tablespoon butter
1 medium onion finely chopped
1 medium carrot finely chopped
1 rib celery finely chopped
1 clove garlic clove, chopped
2 1/2 cups chicken broth
2 1/2 cups half-and-half
1 bay leaf
1 pinch cayenne or dash of hot sauce
3 tablespoons sherry
12 ounces sharp cheddar cheese, shredded
1 tablespoon Thyme Leaves
2 tablespoons flour

1. Sauté vegetables in butter or garlic oil

2. Add flour & cook until mixture starts to brown & stick to the bottom of
the pot

3. Add broth, half-and half, and bay leaf

4. Bring to boil, then simmer about 10 minutes until vegetables are tender

5. Sir in cheese, sherry & thyme
