Cooking Light - Blueberry Coffee Cake

I made this for breakfast today and it was fabulous! I substituted light sour cream for the buttermilk (same amount). It made a very thick batter and was jam-packed with fresh blueberries. No need for the flour trick since the batter was so dense. It was so good that DH and I each had to have two wedges!

I'm glad it worked for you. I don't know what I did wrong. After cooking for the time directed, it was lightly browned on top, but wet and "sweaty" inside. Not at all appetizing.

Hmmm, I don't know what could have gone wrong then. Next time, try the sour cream substitution. It makes a thick batter that I promise you will not remain watery.

In reading the reviews posted on this recipe it sounds like a disaster! Sounds and looks delicious but not all results are foolproof. I won't be making it. Enjoy yours!

It wasn't really damp, but it wasn't real cakey either. I'd say it was more dense and I think that's because it was so packed with blueberries. We really liked it, but if you want it "cakier", I might reduce the fruit a little bit and maybe use two whole eggs instead of one whole egg and one egg white.
