a few weeks ago, i made coconut shrimp and it turned out fantastic.
so i decided to try my hand at making coconut chicken strips.
i marinated the chicken in coconut milk overnight then i breaded it in a mixture of plain panko breadcrumbs and sweetened flake coconut. i deep fried it in peanut oil.
it looked good and it tasted okay...but there was def something lacking. i had heard that soaking the chicken (or shrimp) in the coconut milk would give it a much more noticeable flavor. NOT SO....not at all. it made no difference in taste whatsoever.
first of all, i could not get the coconut to stick to the chicken properly. it needed way more coconut.
i also think some sort of "coconut cream" dipping sauce would have been good with it.
so, who wants to help me figure out a way to make this better?
