I found this (for me) interesting article about a very easy recipe for something called Cloud Bread.  Looks like it's easy to make and if you are cooking for one it could provide a nice, low carb(?) alternative (please know I am basing this off of the comments which until today had been polite, yikes) but it doesn't make a ton of product so you would always have fresh "bread":

I love it when a recipe has a picture so when I am done, I can see what it was SUPPOSED to look like!  LOL

Someone in the reviews said it tasted more like a croissant than a bread...that would be okeey dokey in MY book!

I also saw a suggestion that someone adds a little parm or mozz
