My Mom (unfortunately now not with us) used to make Clam Fritters all the time and I just can't seem to find a recipe that was like hers. She used canned clams - both minced and chopped, saltine crackers, maybe an egg and flour (not sure). She pan-fried these like pancakes - put a small amount in a pan with oil, brown on one side, flip over and brown on the other. Does anyone have a recipe like this for Clam Fritters - I really want to make these again! Thanks!

Ingredients:

Serves: 2Yield:

2 (6 1/2 ounce) cans chopped clams, well drained

2 eggs

1 cup crushed saltine crackers

2 tablespoons minced parsley

1 teaspoon grated onion

4 tablespoons butter

lemon slice (to garnish)

parsley (to garnish)

tartar sauce, if desired

Directions:

Mix clams, eggs, crushed crackers, parsley, and grated onion.

In pan in hot butter, spoon clam mixture into 4 mounds, gently flattening each with back of spoon.

Cook cakes until browned on both sides, about 3-5 minutes per side.

Serve with tartar sauce and lemon wedges, if desired.
