I have been kicking around ideas for our Christmas dinner.  Pre-Covid, we would usually have 5 ish people and I would serve standing rib roast and lots of yummy sides.  This year, it will likely just be Dh and me - not sure if I want to spend so much on a roast.  They are very pricey.  Any other ideas?  I have thought of steak, cornish game hens, turkey...just can't decide.

how about beef filets?  Easy to fix and the best part of beef.

 

Sides can be as fancy or simple.  I like roasted sweet potatoes and brussel sprouts.  Any extra calories you can spend on dessert and wine.

I did a rib roast several years ago, and everyone wanted the roasted ends.  I gave up and went to ribeye steaks, and after cooking all day for Thanksgiving, it took a little off of me since DH grills.

 

We're having:

 

Ribeye steaks

Mandrian Orange Romane salad

Twice Baked potatoes with chives

Italian Tomato Pie with Gruyere cheese

 

French Silk pie

Our stores have great sale prices on prime ribs roasts during the holidays, for DH and I, we have the butcher cut us a 2 rib roast, it's plenty for the 2 of us, especially with sides.

@FastDogWalker2  How about chateaubriand? There are several ways to prepare it.

 

Or, my second suggestion would be a Tomahawk steak that you can share.
