Chocolate Candy Cane Cookies
Cookie Dough:
4 oz. unsweetened baking chocolate
1 1/4 cups chilled butter (2 1/2 sticks)
2 cups sugar
2 beaten eggs
3 tsp. baking soda
1/2 tsp. salt
1/3 cup corn syrup
2 tbs. water
1 tbs. vanilla (3 tsp.) (For stronger mint flavor, replace 1 tsp. vanilla
with 1 tsp. peppermint)
4 cups flour, packed
Topping:
1/4 cup sugar
1/4 cup finely crushed mint candy canes (about 12 minis)
Melt the butter and the chocolate together, mix thoroughly, and set aside to cool.
In a large bowl, combine the sugar and eggs until a uniform pale yellow.
Add the baking soda and salt; mix in well.
Mix in corn syrup, vanilla, and water.
Add the flour in two batches, mixing well after each one.
Mix the crushed candy canes and sugar in a small bowl.
Roll the dough into 1" balls, putting dough in refrigerator between batches.
Roll the balls in the topping and place on greased cookie sheets, flattening slightly.
Bake at 350 for 8-10 minutes. Cool on cookie sheet for one minute (NO LONGER, or they'll stick) , then transfer to wire rack to cool completely.
Makes about 8 dozen cookies.
