Chit Chat and Dessert~ August : )

Good Morning and Happy August!

I hope it's going to be cooler than July. So far it's still hot! 101 degrees yesterday on the last day of July.

My husband dug up that little dinosaur in our yard when he was transplanting an ornamental grass. It was in the area where my son's sandbox used to be. It's been sitting on the bench outside ever since so I thought I'd include him in the photo! lol I think it was hungry for cookies! JPC, I took a big bite of one for you! My niece loves ranger cookies. They aren't my favorite but I did enjoy many of them! {#emotions_dlg.laugh} I added some Craisins, nuts and golden raisins to a few of them. I liked the additions!

1 teaspoon baking powder

1 teaspoon baking soda

2 cups flour

1/2 teaspoon salt

1 cup brown sugar

2/3 cup white sugar

1 stick unsalted butter- softened

1/2 cup Crisco

2 eggs

2 teaspoons vanilla

2 cups Rice Krispies

2 cups old fashioned oats

1 cup coconut

nuts- optional

golden raisins- optional

Craisins- optional

Preheat oven to 350.

In a medium bowl, whisk together the baking powder, soda, flour and salt. Set aside. Cream together the sugars, butter and Crisco in a large mixing bowl. Mix in eggs and vanilla. Add dry ingredients and mix until just blended. Stir in Rice Krispies, oats and coconut. Dough will be stiff. May add nuts, raisins and Craisins.

Bake on ungreased cookie sheets at 350 for about 11 minutes.

Makes about 36 cookies.
