Re: Chilli time

[ Edited ]

🤔  I've heard people say that they use V8 juice in their chili, but I wasn't excited enough to ask for details.

It's like meatloaf. There are probably at least one hundred thousand different recipes floating around out there.

I use Wick Fowler 2 Alarm chili kit.  If you don't like spicy, they make False Alarm.  You can get at Amazon and Walmart.   Use pinto beans instead of kidney beans.  I add jalapenos.  Top with shredded cheddar and diced onions.  Serve with tortilla chips.

I always wanted to try the Wendy's copy cat recipe below but somehow always make it the same old way (Brown ground beef with a bag frozen diced onion, diced green pepper, diced celery, sliced jalapenos with some of the juice (jar), chili seasonings, place in crockpot and add 1-2 large cans petite diced tomatoes and juice, more tomato juice (bottle), Bush chili beans in chili sauce, heat in crockpot on high for 4 hours).

I put a small can of tomato paste in mine, it makes the tomatoes taste even richer.  I also mix up the beans, I may put in half kidney beans and half black beans. I also start by sautĂ©ing about half of a chopped onion, and then add the ground beef to sautĂ©, I even add a small amount of finely chopped carrots or green peppers. These build color and flavor.

Also, depending on the type of ground beef to fat ratio, if the ground beef is fairly fatty, I make sure I drain that well after I have sautĂ©ed the ground beef. Having too much fat in the chili dulls the flavors of the other veggies and spices.

Lastly, I've had chili that was served over rice and it was excellent. My family has always had it just by itself.

Served over mash potatoes is good too.

@Happy2BHere :  This recipe is the best and tastes just like Wendy's from days gone by.  The only think I add extra is a teaspoon or two of sugar/splenda.  I am not much of a cook but this chili always turns out great and I get rave reviews.

Several types of Stewed Tomatoes are available with completely different seasonings!

Some of the Chili Seasoning packets are pretty good!

Have you tried Rice, Slice of Cheese and Chili on top?

Thanks for adding that info - I definitely will try it then next time!

I saved that recipe because it had 81, 5 star-reviews and I figured it had to be good. I do like Wendy's chili. I don't buy it often, but last Christmas after shopping I did stop and get one of the Wendy's Family Size chili deals (feeds 4-6 people @ $10 though I'm not sure they still offer it), and really enjoyed the convenience. Chili and Christmas cookies yum! Woman LOL

@Luvsmyfam- I saute onion and green pepper along with the ground beef.  Drain the fat.  I add 2 small or one large can of diced tomatoes, kidney beans, pinto beans, black beans, a brick of xlnt chili con carne, one can of corn, chili powder, cumin, chopped garlic and a small can off diced green chilis.  Let it simmer for one hour.  If too thin add masa flour with water to make a paste. The first night we have it in a bowl with corn bread,  2nd time we have it over spaghetti.  We freeze the rest for another time.  I make a big pot of chili using 2-3 lbs. of meat
