I know chilli is a pretty simple soup to make,but mine needs a extra kick.I use usual ingredients. Ground chuck,kidney beans,tomato juice(That I Have Canned)and stewed tomatoes.Of course seasonings.What am I missing?

@Luvsmyfam @Chopped onion, masa hara flour, cumin, cayenne, chili powder, salt, garlic, oregano, paprika. You can also add a fresh, chopped tomato.

I put a small can of tomato paste in mine, it makes the tomatoes taste even richer.  I also mix up the beans, I may put in half kidney beans and half black beans. I also start by sautéing about half of a chopped onion, and then add the ground beef to sauté, I even add a small amount of finely chopped carrots or green peppers. These build color and flavor.

 

Also, depending on the type of ground beef to fat ratio, if the ground beef is fairly fatty, I make sure I drain that well after I have sautéed the ground beef. Having too much fat in the chili dulls the flavors of the other veggies and spices. 

 

Lastly, I've had chili that was served over rice and it was excellent. My family has always had it just by itself.

My "secret" ingredient for chili is adding a heaping teaspoon of cocoa powder. My favorite recipe is from an old Betty Crocker cookbook.

You might look for diced tomatoes with chili seasoning already in them - gives them a little more flavor. I also season my ground beef with diced onion while cooking and garlic powder. Chili Man Chili is the seasoning packet I always add to the chili at the end. I know people use tomato juice or tomato soup, but I prefer just using seasoned diced tomatoes and their juice (canned), kidney beans and northern beans (1 can of each, drained), and a couple of cans of water with the ground beef & onions, and seasoning packet. I make it in my crockpot so that it can cook on low for 5 or 6 hours.

I like to add a can of diced green chilies to chili.

I like to add a pinch of cinnamon in my chili and sometimes I make it with stew beef instead of ground beef and serve with sour cream cheese and cornbread.

I swear by Williams Chili Seasoning.  Comes in an envelope.  Walmart carries it, also Amazon.  This has no salt or flour and is the best.

 

I feel tomato juice is too watery.  I use a can of tomato paste and diced tomato,  crushed or pureed, whatever I have.
