1-1/4 lbs. skinless boneless chicken cut into pieces (breast or thigh)
2 cans of chicken broth
2 cans cream of chicken soup (if possible use chicken with herbs soup but if you can't find that add some of your own herbs,parsley, oregano, etc)
1 16oz. pkg. frozen loose- pkg. broccoli, carrot, cauliflower blend (or any mixed veg)
1 20 oz. pkg. refrigerated diced potatoes with onoins (Simply Potatoes found in refrigerated section at store are good)
Put all ingredients in a 4-6 qt. crock pot and stir together. Cook on High for 3 1/2 hours or Low for 7-8 hours.
