Chicken Soup Recipe

Hi Friends! I have never been able to make a good chicken soup and I know there must be hundreds of ways to put it together. I have a large chicken now and I don't want to waste it. I would so appreciate a tried and true more gourmet type recipe. So many thanks in advance ..... Penny
