My GF made the best chicken salad sandwich wraps the other day, I had to have the recipe! Here it is:

3 lg. cans chicken, drained

2 tsp. olive oil

salt & pepper to taste

1/4 c. Miracle Whip

1/4 c. non-fat, plain Greek yogurt

1/2 c. cream or whole milk

2 tsp. poppy seeds

1 c. celery, chopped

1 T. butter

1/2 c. chopped pecans

1 c. dried cranberries

In a skillet, cook chicken in olive oil. (I questioned this: isn't canned chicken already cooked? My GF said she skipped this step.)

Melt butter & drizzle over pecans. Toast pecans in oven or skillet.

Mix all ingredients together. Wrap in whole wheat flat bread with a leaf of lettuce.

Note: Obviously, you can modify as needed (use left over chicken, omit nuts, substitute dried cherries for cranberries, etc.) Normally, i am not a huge chicken salad fan, but this stuff was crazy good! Hope you enjoy!
