Chicken Livers with Water Chestnuts

Not everyone's cup of tea, I know, but I like this dish and maybe some of you Swappers will, too. If you do like chicken livers, this recipe is a good one. I have never seen a recipe for this posted on the Swap....

Chicken Livers with Water Chestnuts

1 lb. fresh or thawed frozen chicken livers
4 slices bacon, cut in 1/2 inch pieces
2 tbsp. chopped green onions
1/4 cup flour
1/4 tsp. monosodium glutamate (optional)
1/2 tsp. salt
1/3 cup thinly sliced canned water chestnuts
1/2 cup light cream
2 tbsp. finely chopped green onion tops

Cut the chicken livers in half, removing any connecting tissue.
Place the bacon pieces in a frying pan and sauté until lightly browned.
Add the chopped green onions and cook about 1 minute.
Combine the flour, monosodium glutamate and salt, and toss the livers in flour until well coated.
Add to the frying pan, and sauté about 5 minutes, turning so they brown evenly.
Add the sliced water chestnuts and cream.
Bring the mixture just to the boiling point.
Serve immediately, plain or on crisp toast.
Garnish each serving with chopped green onion tops.
Serves 4.

This reminds me of an hors d'oeuvre I took to a family Christmas one year, bacon wrapped chicken livers. I love stuff like this, my siblings and nieces and nephews? Not so much. I stuck to more conventional food after that year, but I will be trying your recipe.

I have made the bacon wrapped chicken livers before and marinated them in a soy sauce and ginger marinade before cooking. I have also tucked a slice of water chestnut in with the livers for a little crunch. Like you say, "I love stuff like this". Give this recipe a try and see if you like it for a change. sue-p

Sue-p, this is definitely my cup of tea! I love chicken livers. Of course, we are made to feel guilty eating them by our doctors...but once a year or so can't hurt. I'm saving this recipe. Thanks for posting it.
