I didn't feel like fixing a meal tonight, but wanted something tasty and easy. I had been to Costco yesterday and had my new six-pack of Kirkland chicken, and remembered that there is a chicken soup recipe included in the package. So, off I went to the kitchen, opened it up and, voila, for the first time in a hundred years - maybe less - the recipes had changed and there was no soup recipe! There was no way I could find that little piece of paper that I saved and put away somewhere for the day I needed the recipe. But, good old Google found it for me, and I was home free.

Now, as for the soup, it is really a satisfying pleasant soup, not too thick, but enough that it makes a meal with a toasted buttered potato roll and/or something else of your choosing. There's no salt added or needed because of the well-seasoned Kirkland chicken breast meat, the cheddar cheese, and the Worcestershire sauce. It's very mild, so when you're in that kind of mood, it really fits the bill. The tenderness, as well as the seasoning, of the Kirkland chicken is what makes this so very pleasant. Here 'tis:

Kirkland Chicken Cheese Soup

1 c carrot, shredded
1/4 c green onion, sliced
3 tablespoons butter
1/4 c all-purpose flour
2 c milk
10 3/4 oz can chicken broth
12 1/2 oz can chicken breasts
1 c cheddar cheese, shredded; I used Tillamook sharp cheddar
1/2 t Worcestershire sauce
1/8 t black pepper

In a medium saucepan, cook carrots and green onion in hot butter for 10 minutes or until tender but not browned. I started on medium heat and reduced it for the last 5 minutes.

Stir in flour, incorporating it well and letting it cook slightly; then slowly add milk, chicken broth, Worcestershire sauce and black pepper, cooking and stirring until thickened and bubbly, about 5 minutes.

Stir in chicken and cheese, cooking and stirring over low heat until cheese melts.
Best served hot.
