Cheesy Potato Bake

6 medium baking potatoes

2-1/2 cups grated sharp cheddar cheese

1/4 cup (1/2 stick) butter

1 cup sour cream, room temperature

1/4 cup minced onion

Salt and pepper to taste

Paprika

Boil potatoes until tender. Drain. Cool slightly then peel. Shred into bowl. Preheat oven to 350. Butter 8" square baking dish.
Put 2 cups of the cheesep in a heavy small saucepan. Add butter. Heat on low heat until almost melted. Stir constantly for about 1 minute. Remove from heat. Stir in sour cream and onion. Season with salt and pepper.
Fold into potatoes. Pour into prepared dish. Top with remaining 1/2 cup cheese. Sprinkle with paprika. Bake until bubbly, about 30 minutes. Serves 6
