Cheese Stuffed Zucchini
2 (approx 5-oz) Zucchini
2 tsp olive oil
1 cup sliced mushrooms
1 tsp fresh minced garlic
4-oz Mozzarella cheese, diced
1 T chopped fresh basil or 1 tsp dried
1 T fresh chopped parsley
Dash each of salt, pepper and ground nutmeg
Parmesan cheese, grated
Trim ends of both zucchini. Slice each lengthwise and scoop out pulp, reserving shells. Heat olive oil in small saucepan. Add pulp, mushrooms and garlic. Saute until all is soft. Place in a bowl and cool slightly. Add Mozzarella cheese, basil, parsley, and seasonings.
Stuff shells. Sprinkle grated Parmesan cheese (use amount to your liking) on each shell. Place in baking dish and bake covered at 350 for 30 minutes. Remove cover and bake an additional 15 minutes.
