This is a nice change for an easy chicken dish. The sauce is really tangy, so be aware. I just fixed it with simple sides, mashed potatoes and green beans, a salad and French bread.
Cheery Cherry Chicken
3/4 c cherry preserves
1/4 c prepared yellow mustard
2 T water
1 T Worcestershire
(4) 6-oz boneless skinless chicken breasts, seasoned with salt and pepper to taste
1 T olive oil
Mix preserves, mustard, water and Worcestershire in measuring cup; set aside.
Cook chicken in hot oil in nonstick skillet until browned on both sides, about 15 min.
Stir mustard mixture into skillet. Simmer over medium-high heat 3 to 5 min. until sauce thickens and chicken is cooked in center.
