Carrot Cake Cookies 🥕🍪
Deliciously moist and flavorful cookies that taste just like carrot cake in a portable form.
Ingredients:
- 1 cup grated carrots
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Directions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine grated carrots, rolled oats, almond flour, maple syrup, raisins, walnuts, cinnamon, nutmeg, and salt. Mix until well combined.
3. Using a cookie scoop, form the dough into cookies and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
4. Bake for 12-15 minutes, or until the edges are golden brown.
5. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

My sister-in-law makes a less health-conscious, frosted version of this cookie.  They were good sellers at school/church bake sales:

 

12 tbsp butter, melted

1 cup brown sugar

1/2 cup sugar

1 egg

1 egg yolk

1 tsp vanilla

2 1/2 cups flour

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/2 lb peeled and grated (on small holes of box grater) carrots (about 1 1/2 cups)

 

In big bowl, mix butter, sugars, egg and yolk, and vanilla. 

In mixing bowl, whisk flour, cinnamon, baking soda, and salt.  Stir into mixture in big bowl until some streaks of flour remain.

Squeeze carrots by handfuls over sink to release most of liquid.  Add to bowl of batter.  Stir carrots into batter.

Line baking sheet with parchment and lightly spray with nonstick spray.

Scoop 2-3 tbsp-sized mounds onto baking sheet 2 inches apart.

Bake in 375 degree oven for 13-15 minutes.  Cool on wire rack.    

 

Frosting:

6 tbsp softened butter

6 oz softened cream cheese

1 tbsp sour cream

1 tsp vanilla

1 1/2 cups powdered sugar

 

Beat butter, cream cheese, sour cream, and vanilla with electric mixer until smooth.

Mix in powdered sugar on low, then whip until thick. (Thin with a little milk if needed.)

I don't believe I have ever eaten a carrot cake cookie, but I think I would really like it. Love carrot cakes!

I do love a good carrot cake/cookie--only not with raisins or pineapple please!!

yes you can! I have used oat flour would be fine, recipe says makes 12 but I usually get more or have doubled it when cooking for a crowd....great for one person baking Smiley Happy hth
