Carnitas... stove top method

Carnitas... stove top method
 
2 lbs pork loin.... cubed 
1 cup lard
About 6 to 8 cups of water ( just enough to cover the meat )
1 table of salt
3 clove of garlic or garlic powder ( optional )
In a large pot over medium heat place all the ingredients and cover until it comes to a boil
Reduce to medium low and simmer for 45 mins
After 45 mins uncover and turn heat to a medium heat to reduce the liquid ( 20 to 25 mins )
Start to check it at about 5 to 10 mins
The meat will start to fry in its own fat and lard at this point
Carefully brown the meat at medium low until the pork is evenly browned about 15 to 20 mins
At this point be careful not to overcook or you will get a very dry meat

Sounds great! I love Carnitas.. I posted this stove top recipe a couple of years ago, when I had a different nic.. Lots of  folks seemed to like it- it is similar to yours nad you reminded me of it, so I thought I would  re-post it..

 

I love carnitas- and this is the best and easiest way to make them- kind of like magic- I have even done it in my pressure cooker (mine has a browning element)

Sorry its not a more "formal" recipe...

Take a 3-4 lb boston butt (shoulder) and cut it into large chunks- do not remove fat- put it in a dutch oven with 2 cups water, 2 tsp salt, 1 cup orange juice and 3-4 cloves whole peeled garlic- Bring to boil, then reduce to simmer for 2 hours, uncovered- Once your 2 hours are up, turn the heat up - it will take about 30 minutes, or so, but eventually the liquid will reduce and evaporate- keep an eye on it- the object is to now "fry" the meat in the dutch oven (this is why you left the fat on it)- so once it gets to the point that it starts to sort of stick to the bottom of the pan, start stirring, so it doesn't stick and burn- once it is caramelized and crispy around the edges- its done- serve it in a flour tortilla with lime and whatever-

Thanks for posting this recipe.  I have seen it on the Internet but did not save it.  Not cooking yet, but we love Mexican and I am definitely making this.  Love browned pork!
