Cardamom Cuties
1 cup salted butter, softened
2 1/2 cups dark brown sugar, packed
2 large eggs
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cardamom
3 1/2 cups AP flour, packed
1/2 cup shredded coconut
1/2 cup white chocolate chips
extra brown sugar for rolling dough balls (about 1/2 cup)
Beat softened butter until smooth, add dark brown sugar & beat until fluffy.
Mix in the eggs; beat until incorporated.
With mixer on low, add baking soda, salt, and cardamom.
Add flour in 1/2 cup increments, beating after each addition.
Using a food processor, chop coconut & white chocolate chips into small pieces; stir into dough by hand.
Cover bowl with dough and refrigerate for at least 2 hours (overnight is OK).
When ready to bake, line cookie sheets with parchment or spray with Pam.
Put the extra brown sugar into a small bowl.
Roll the dough into 1" balls, and roll each ball in brown sugar to cover completely.
Arrange dough balls on cookies sheet 2" apart. Flatten each with the bottom of a glass or a spatula.
Bake at 350 for 8-12 minutes or until golden brown.
Cool on baking sheets for a minute or two before removing to a wire rack to cool completely.
Store in an airtight container; these also freeze well.
Makes about 6 dozen cookies.
