Caramel Pecan Bread Pudding

 

Preheat oven to 325*.

 

4 cups french bread ...cut into 1 inch cubes.

8 eggs

1 quart half and half

1 cup sugar

1 teaspoon vanilla

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup raisins

3/4 cup pecans...chopped but chunky

caramel ice cream topping

 

Spray a 9 x 11 inch pan baking pan (preferably a glass pan) with non stick cooking spray. Mix together eggs, half and half , sugar, cinnamon and nutmeg in a bowl. Place bread cubes in pan. Pour egg mixture over bread cubes. Push bread down with spatula. Let soak for 1 hour. Sprinkle top with raisins and nuts. Push down again. Bake covered with foil at 325* for  1 hour. Remove foil and bake for an additional 15 minutes or til lightly browned. Drizzle caramel ice cream topping over the top while it is still hot so it melts into the bread pudding.
