It is a good time for soup here in Minnesota. This week is really cold and next week will be even colder, with highs for the day being below zero. I got this recipe from the internet and plan to try it during this cold spell. It is easy to make and I have all of the ingredients on hand. Thought I would share it with others, too.

Cabbage Soup

2 tbsp. olive oil
1/2 cup yellow onion, peeled and chopped
1/2 cup carrot, chopped
1/2 cup red bell pepper, chopped
2 medium garlic cloves, minced
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup fresh or frozen green beans
2 cups chopped cabbage
4 cups vegetable stock
1 tbsp. tomato paste

Heat oil in heavy stock over medium heat.
Add onions, carrots, sweet pepper, and garlic; sauté for 4 minutes.
Add all spices and sauté for 2 minutes.
Add stock, cabbage, green beans, and tomato paste. Stir thoroughly.
Simmer, uncovered, for 13 to 15 minutes.
Check vegetables for tenderness, especially the green beans.
Remove from the heat, taste and add more salt and pepper, if needed.
Serves 4.

Thanks Sue-P for a great idea for this cold front we have coming in. Hubby loves everything in it so it'll be a hit with him.

And thanks to all the other posters for the ideas of different ingredients you add to yours. We like the smoked sausage as well.

If I recall this was an excellent WW soup. The points were like 2 per serving. I haven't made it in awhile but I am glad you posted it because I am now going to work it back into my program. Great timing being the new year and all...you know those new diets are going to kick in.

I was just thinking that this looks alot like the old no-points WW soup. And for those who have read a previous post about the 5-2 diet - think that this would be perfect for the fast days!

Just made this soup for lunch and it is delicious. Seems better to me than the old time diet ones I used to make. Perhaps it is the mix of the seasonings. Thanks for posting it.

Snow is coming down here in Connecticut -- looks beautiful. Just got back from doing some errands and plan to make this soup for supper tonight -- w/Ital. bread and a salad. Perfect for a snowy evening -- thank you all for your added suggestions, too. =^..^=
