I'm looking for a relatively easy way to remove the core from a head of cabbage.  I've tried freezing the cabbage for a while, cutting around the core and even plunging it in boiling water for a few minutes.  All are sort of successful, but I'm looking for something easier.  Any suggestions?

In the restaurant, prepping cases of iceberg lettuce and cabbage, the method was to hold the washed head about face high, gripped firmly in both hands and in one quick motion, bash the head, core side down against the stainless steel prep table.

 

This breaks the fiberous connection, shoves the core inward, and it can be pulled out from there.

No metal blade was used to remove the core.

@x Hedge   This actually does work too. I've done this w/head lettuce (don't eat this one anymore though). I've never tried this w/cabbage though.

That's how we've always done lettuce and cabbage.

 

A good slam of the core on the counter and it's easy to twist/pull the core out, with no cutting involved.

You never know how strong you are until being strong is the only choice you have.

I slam core side down on the counter with a good whack. LOL!!! It removes easily.

@x HedgeYou are right, that's the way we did it at the tavern I worked at.  Made a whole lot of coleslaw every Friday morning for Friday nite fish frys.

I also use the slam it method.

 

Just yesterday I bought a head of cabbage -  picked it up without looking at the price, so as I read through the items on my receipt looking for that price, I was stunned to find I'd bought iceberg lettuce, not cabbage.  Strange, it looks like cabbage, is heavier than any head of lettuce I've ever seen, and it will get boiled for my New England-style corned beef dinner!.

@millieshops . Oh goodness! That is so funny. In my stores, the iceberg is wrapped and the cabbage is not.
