I just use Duke's mayo on a slice of bread and peeled slices of small cucumbers, a little salt and pepper. I like cucumber sandwiches the origonal way.

Cucumber Sandwiches
1 8 oz cream cheese, softened
1/3 cup mayonnaise
1 med cucumber, peeled, seeded and diced
1/2 t fresh dill weed, finely chopped
1/4 t garlic salt
10 slices white bread
10 slices wheat bread
Process cheese and mayo in a blender or food processor until smooth, stopping to scrape down the sides.
Combine cream cheese mixture, cucumber, garlic salt and dill weed in a bowl.
Spread cucumber mixture evenly onto white bread slices and top with wheat bread slices. Using a 2 to 3 inch round cutter, cut sandwiches, discarding the edges. Serve soon after making. Store cucumber sandwiches in an airtight container for up to 1 hour before serving.

I haven't made this, but it's the Pioneer Woman's recipe, Ree Drummond... I just saw it on her show this morning. I haven't made it, but it sounds simple and good to me. If you Google Pioneer Woman Cucumber Sandwiches, you can watch the video. I think I might try this one:
Pioneer Woman Cucumber Sandwiches
Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.

@KatieB This is also th recipe I use. Quick, easy and absolutely delicious. I've never had anyone refuse one.

Cucumber sandwiches sound really good...I have never made them but have sampled at a couple of parties...seeing this post reminded me of a commercial about Ethel meeting the Queen and serving cucumber sandwiches....Whatever you do just don't add any Franks's RedHot Sauce!!!![]()
