Re: CUCUMBER SANDWICH RECIPE HELP

I just use Duke's mayo on a slice of bread and peeled slices of small cucumbers, a little salt and pepper.  I like cucumber sandwiches the origonal way.

Re: CUCUMBER SANDWICH RECIPE HELP

Whipped cream cheese till soft, add a bit of fresh dill since it is so powerful, and spread the crustless bread with it, then layer super thin slices of cucumber sprinkled with a bit of kosher salt. Done.

@doxie1I love fresh tomatoes, hot from the sun, cut open and filled with cottage cheese or chicken salad.

Re: CUCUMBER SANDWICH RECIPE HELP

Cucumber Sandwiches

1 8 oz cream cheese, softened
1/3 cup mayonnaise
1 med cucumber, peeled, seeded and diced
1/2 t fresh dill weed,  finely chopped

1/4 t garlic salt
10 slices white bread
10 slices wheat bread

Process cheese and mayo in a blender or food processor until smooth, stopping to scrape down the sides.

Combine cream cheese mixture, cucumber, garlic salt and dill weed in a bowl.

Spread cucumber mixture evenly onto white bread slices and top with wheat bread slices.  Using a 2 to 3 inch round cutter, cut sandwiches, discarding the edges.  Serve soon after making. Store cucumber sandwiches in an airtight container for up to 1 hour before serving.

Re: CUCUMBER SANDWICH RECIPE HELP

I haven't made this, but it's the Pioneer Woman's recipe, Ree Drummond... I just saw it on her show this morning. I haven't made it, but it sounds simple and good to me. If you Google Pioneer Woman Cucumber Sandwiches, you can watch the video. I think I might try this one:

Pioneer Woman Cucumber Sandwiches

Ingredients
  • 8 slices white sandwich bread
  • 2 tablespoons butter, softened
  • 1/2 English cucumber, peeled and thinly sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon finely chopped chives
  • 1 teaspoon yellow mustard
  • Kosher salt and freshly ground black pepper

Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.
